Apple Walnut Vinaigrette

Ingredients
- 1 teaspoon Dijon mustard
- 2 shallots, minced
- 1⁄4 cup apple juice
- 1⁄4 cup lemon juice
- 1⁄4 teaspoon salt
- 1⁄8 teaspoon pepper
- 1 cup olive oil
- 1⁄2 cup walnut oil
Directions
- In a medium bowl, combine mustard, shallots, apple juice, lemon juice, salt and pepper.
- Whisk in olive oil and walnut oil.
- After use, store remaining dressing in a covered jar for up to 5 days.
