Apple Walnut Scone With Ricotta

Ingredients
- 1 large apple, skin on, grated (seeds removed)
- 1 egg
- 1⁄2 cup ricotta cheese
- 1⁄4 cup sugar
- 1 tablespoon stevia
- 1 teaspoon vanilla
- 3⁄4 cup walnuts, rough chop
- 3⁄4 cup ground flax seeds
- 2 teaspoons cinnamon
- 2⁄3 cup whole wheat flour
- 2⁄3 cup oat bran
- 2⁄3 cup all-purpose white flour
- 1⁄2 teaspoon salt
- 3⁄4 teaspoon baking soda
- 2 teaspoons baking powder
- 1⁄4 cup butter
Directions
- Mix together first 9 ingredients, blending well.(apple through cinnamon).
- Stir together flours, oat bran, salt, baking soda and baking powder.
- Cut butter in to the flour mixture.
- Stir wet ingredients into dry ingredients, mix well.
- Put dough (will be stickie) on floured surface and pat out into a large circle.
- Cut into 8 servings and transfer to greased baking sheet.
- Bake at 375 for 20-23 minutes.
