Apple Stuffing for Chicken

This recipe came from my sister way back in the 70's. It is full of flavour and a nice change from bread stuffing.

• Serves: 2-3

Ingredients

• 1  lb potato, 3/4 par boiled, steamed dry and mashed
• 1  apple, diced
• 4  slices  raw bacon, cut in 1/2-inch pieces (optional)
• 1⁄4 teaspoon thyme
• 1⁄4 teaspoon sage
•  salt and pepper
• 1  tablespoon parsley

Directions

1. Combine all ingredients and stuff your chicken.
2. Roast as normal.
3. Enjoy!
