Apple Spice Cake

Easy and fast, another doctored cake mix recipe. Great if unexpected company arrives, made with cupboard staples. Dust with confectioners sugar or even use a chocolate glaze.

• Yields: 1 bundt cake

Ingredients

• 18  ounces  spice cake mix, i usually use duncan hines
• 1 (21 ounce) can  apple pie filling
• 2  teaspoons ground cinnamon
• 3  eggs, lightly beaten

Directions

1. Preheat oven to 350 degrees.
2. Grease and flour a Bundt cake pan.
3. I use Bakers Joy spray.
4. Put apple pie filling in large bowl and chop large pieces of apple into small pieces.
5. Add spice cake mix, ground cinnamon and the 3 beaten eggs.
6. Beat for 1 minute on low speed.
7. Scrape sides of bowl.
8. Beat for 3 minutes on medium speed.
9. Pour into prepared Bundt pan.
10. Bake for 45-55 minutes or until toothpick inserted near center of cake comes out clean.
11. Cool in pan on wire rack for at least 1 hour.
12. Invert onto serving plate.
