Apple Sauce Chocolate Chip Cookies

Ingredients
- 1 cup applesauce
- 1 cup sugar
- 1⁄2 cup Crisco
- 1 egg
- 1⁄2 teaspoon salt
- 2 cups flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 3 teaspoons cinnamon
- 1 cup chocolate chips
- 2 tablespoons vanilla extract
Directions
- Cream together applesauce, sugar, and Crisco (the Crisco will be slightly chunky).
- Mix in egg and vanilla.
- Sift together all dry ingredients (except chocolate chips) and mix in with wet ingredients just until blended. Don't over mix.
- Hand mix chocolate chips just until blended.
- Preheat oven to 350 degrees and line two cookie sheets with parchment paper or grease with cooking spray.
- Spoon dough 2-3 inches apart on the sheet and bake for 12-15 minutes. When they are done, the cookies will have a soft cakelike texture.
