Apple Pecan Cheesecake

Ingredients
For Filling
- 1 1⁄2 cups packed brown sugar, divided
- 4 (8 ounce) packages cream cheese
- 1 teaspoon vanilla
- 1 cup sour cream
- 4 eggs
- 4 cups apples, peeled and chopped
- 3⁄4 cup pecans, chopped
- 1 teaspoon ground cinnamon
For Crust
- 1 1⁄2 cups graham cracker crumbs
- 1⁄4 cup butter, melted
- 2 tablespoons packed brown sugar
Directions
- 1. Heat oven to 325 degrees. Line 13 x 9 inch pan with foil (if making crust).
- 2. For crust: mix crumbs, butter and 2 tablespoons of sugar. Press onto bottom of pan.
- 3. Beat cream cheese, 1 cup sugar and vanilla with mixer until blended.
- 4. Add sour cream, blend.
- 5. Add eggs, 1 at a time, mixing on low speed after each until just blended. Pour over crust.
- 6. Mix remaining sugar, apples, pecans and cinnamon. Spoon gently over batter.
- 7. Bake 1 hr to 1 hours 5 minute Cool. Refrigerate 4 hours. Use foil to lift cheesecake from the pan before cutting.
