Apple Parsnip Soup

- Saute the onions with the olive oil in a large pot until the onions are golden.
- Add the apples, the parsnips, the carrots, the (optional) soup mix, the nutmeg, and the water.
- Cook on medium heat for 1 (one) hour, or until the carrots are soft.
- When done cooking, add the juice from the lemons, then take a hand-held grinder (or you can use a blender) and blend all the soup until it is smooth and there are no lumps of anything in it.
- Your done! The soup can be served hot or cold.
