Apple Muffins (Very Healthy)

This recipe is from the Liver Cleansing Diet by Dr Sandra Cabot. It is very healthy and tastes great. I don't add the sultanas because I don't like them and if I don't have almond oil or soy milk, I use canola oil and fat free milk and they still turn out great. Show more

Ingredients

  • 1 12 cups  wholemeal self-rising flour
  • 12 teaspoon mixed spice
  • 12 teaspoon cinnamon
  • 12 cup sultana
  • 2  egg whites
  • 2  tablespoons  cold-pressed  almond oil
  • 1  cup  chopped cooked apple
  • 1  tablespoon honey or 1  tablespoon  apple juice concentrate
  • 12 cup soymilk

Directions

  1. Sift flour and spices and add sultanas.
  2. Beat egg whites and add the oil, apple, honey and milk and blend thoroughly. Add to the dry ingredients and stir until thoroughly mixed.
  3. Spoon into a lightly greased muffin tin and bake in a moderate oven for 17 minutes or until cooked.
