Apple Mango Chicken Salad

Ingredients
- 1⁄2 cup cubed mango
- 3 cups shredded cooked chicken
- 3⁄4 cup mayonnaise
- 1⁄2 cup diced celery
- 1⁄4 cup diced red onion
- 3⁄4 teaspoon prepared mustard
- 1 pinch salt
- 1 pinch black pepper
- 1 pinch curry powder
- 1⁄2 apple, diced
- 1⁄4 scotch bonnet pepper, finely diced
Directions
- Mix all ingredients and refrigerate 30 minutes to allow flavors to blend. Can be served on a roll, with crisp lettuce, or on greens, as a salad.
