Apple Jolly Boys

This is a very old recipe people made when the chickens quit laying. It is kinda pancake cross doughnut fried bread. It is sweet made with cornmeal and buckwheat as well as white flour here, but I've seen it with rye flour. I really liked these little pancakes. Show more

  1. Chop apple pie filling fine; add egg, sugar and molasses.
  2. Add baking powder.
  3. Add cinnamon.
  4. Add flour, buckwheat flour, and cornmeal.
  5. Add water.
  6. Batter will be very thick.
  7. Fry on medium, buttering griddle heavily because these pancakes burn easily. Spread out when putting on griddle; they puff a lot.
  8. Flip over.
  9. Serve with butter; they don't need syrup.
