Apple Jicama Slaw

Serves: 4-6

Ingredients

  • 1  gala apples, cored and sliced into thin strips
  • 12 small jicama, peeled and sliced into thin strips
  • 1  lime, juiced
  • 1  tablespoon  organic apple cider
  • 12 medium  poblano pepper, seeded and sliced into thin strips
  • 1  tablespoon granulated sugar
  • 1  teaspoon sea salt, plus more to taste
  • 1  pint blackberry
  • 14 bunch cilantro, stems removed

Directions

  1. Combine the sliced apples, jicama and poblano pepper in a medium-sized bowl.
  2. Add the lime juice, apple cider, sugar and salt and stir well. Cover and refrigerate for about an hour so the flavors can develop.
  3. Just before serving, chop the cilantro and stir it into the mixture. Add the blackberries and taste for seasoning.
  4. Serve slightly chilled.
