Apple-Herb Relish

Yields: 1 1/2 cups
Ingredients
- 4 large apples, cored & diced
- 1 cup coarsely chopped fresh flat-leaf parsley
- 1⁄2 cup extra-virgin olive oil
- 2 tablespoons white wine vinegar
- salt & pepper (to taste)
- 2 tablespoons coarsely chopped of fresh mint
Directions
- mix apples,parsley,olive oil & vinegar.
- season with salt & pepper.
- relish can be refrigerated up to 1 week in a airtight container.
- bring to room temerature and stir in mint just before serving.
