Apple Fritters

Ingredients
- 3 medium apples, peeled, cored, and cut into 1/4-inch rounds
- 1 cup whole wheat flour
- 1 teaspoon baking powder
- 1⁄4 teaspoon salt
- 1⁄4 teaspoon ground cinnamon
- 1 large egg
- 1 cup apple juice
- 1 tablespoon vegetable oil
Directions
- Dry apples with paper towel and set aside. Apples need to be dry or batter will not stick.
- Mix flour, baking powder, salt, and cinnamon in a bowl.
- In a separate bowl, beat egg, juice, and 1 1/4 teaspoons of vegetable oil. Mix wet and dry ingredients together until there are no lumps.
- In a nonstick pan, heat 1/2 teaspoon of oil. Dip apples in batter and let excess drip off. Saute slices a few at a time. Cook until golden, turn, and brown the other side. Continue until all apples are done. Drain on paper towels.
- Top with cinnamon and sugar, honey, or maple syrup.
