Apple Crumble Muffins

Ingredients
Topping
- 1⁄2 cup brown sugar
- 1⁄2 cup all-purpose flour
- 1⁄2 cup oatmeal
- 1⁄4 cup butter
- 1 teaspoon cinnamon
Muffins
- 1 cup brown sugar
- 2⁄3 cup oil
- 1 egg
- 1 1⁄2 teaspoons vanilla
- 2 cups all-purpose flour
- 1⁄2 cup whole wheat flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1⁄4 teaspoon salt
- 1 teaspoon cinnamon
- 1⁄2 teaspoon nutmeg
- 1 tablespoon lemon juice
- 1 cup milk
- 2 cups apples, shredded
Directions
- Mix together all ingredients for topping and set aside.
- In a measuring cup, add 1 tbsp lemon juice and add milk to make one cup.
- In a large bowl mix together brown sugar, oil, egg and vanilla until smooth.
- In a separate bowl, sift together flours, baking soda, baking powder, salt, cinnamon and nutmeg.
- Add wet ingredients and milk to dry ingredients.
- Fold in apples, mixing just until combined.
- Spoon into greased muffin cups filling 3/4 full.
- Sprinkle topping over evenly.
- Bake at 350°F for 25-30 minutes.
