  1. Preheat oven to 375 degrees F. Butter a 14 x 8 glass baking dish.
  2. Mix brown sugar, oats, flour, cinnamon, nutmeg, and coconut in food processor, using on/off turns.
  3. Add butter and process until chopped into small pieces.
  4. Add pecans; process until moist clumps form.
  5. Peel, core and slice apples. Place evenly in baking dish.
  6. Sprinkle cranberries evenly over top of apples.
  7. Sprinkle topping evenly over apple-cranberry mixture.
  8. Bake until apples are tender, filling is bubbling and topping is crisp, about 45-50 minutes Serve warm or at room temperature.
