Ingredients
Coffee Cake
- 2 cups sugar
- 1 cup pecans
- 1 tablespoon cinnamon
- 1 cup raisins
- 2 eggs
- 1 cup sour cream
- 1 tablespoon baking powder
- 1 tablespoon baking soda
- 1⁄2 teaspoon salt
- 1 teaspoon vanilla
- 1⁄2 cup soft margarine
- 3 cups granny smith apples
- 2 cups whole wheat flour
Frosting
- 1 (8 ounce) package cream cheese
- 1⁄4 cup margarine
- 2 teaspoons vanilla
- 1 (1 lb) box confectioners' sugar
Directions
- Cake:
- Cream together sugar, margarine, eggs, vanilla and sour cream. Add the apples, raisins and pecans mix together then add all the dry ingredients and mix well and pour int a tube or bundt pan and bake in a 350 oven for 50 minutes or until the knife test comes out clean.
- Frosting:
- Cream together room temperature cream cheese and margarine, add vanilla and confectioners sugar mix and frost a cooled coffee cake.
