Apple Cinnamon Scone

Ingredients
- 2 cups unbleached flour, sifted
- 2 teaspoons baking powder
- 1⁄2 teaspoon baking soda
- 1⁄2 teaspoon salt
- 1⁄4 teaspoon cream of tartar
- 1⁄2 cup brown sugar
- 1⁄2 cup butter, chilled
- 1⁄2 teaspoon lemon zest
- 1 1⁄2 cups apples, cored, pealed and chopped
- 2⁄3 cup cream
- sugar, and cinnamon to sprinkle
Directions
- Preheat oven to 425.
- In a large bowl sift together flour, baking powder, baking soda, salt and cream of tartar. mix in brown sugar.
- Grate chilled butter and incorporate in 2 or 3 batches.
- Peal and core apple, and chop into small chunks. Add apples and lemon zest to flour and stir.
- Add cream, combine. Be careful not to over stir or knead.
- Turn contents of bowl onto floured board. By hand, pat together into a 6"x 6"square with uniform thickness. Cut into quarters and then cut each quarter diagonally.
- Cover jelly roll pan with parchment paper. Space scones evenly on tray, brush with cream and sprinkle with sugar and cinnamon.
- Bake for 15 - 20 minutes or until lightly brown on top.
