Apple Chicken Stir-Fry

Ingredients
- 1 lb cubed boneless skinless chicken breast
- 1 tablespoon vegetable oil
- 1⁄2 cup sliced onion
- 1 cup carrot, thinly sliced
- 1 teaspoon dried basil
- 1 1⁄2 teaspoons vegetable oil
- 1 cup pea pods
- 1 tablespoon water
- 1 medium golden delicious apple, cored and thinly sliced
- 2 cups cooked rice
Directions
- Stir-fry cubed chicken in 1 tbsp oil in a non-stick skillet until lightly browned and cooked through.
- Remove from skillet.
- in the same skillet, stir-fry onion, carrots and basil in 1-1/2 teaspoon oil until carrots are tender.
- Stir in pea pods and water.
- Stir-fry 2 minutes.
- Remove from heat. Stir in apples.
- Add mixture to chicken.
- Serve hot over cooked rice.
