Apple Barley Salad

Ingredients
- 1⁄2 cup barley
- 1 fuji apples or 1 braeburn apple
- 1 tablespoon unsalted butter
- 1 tablespoon apple jelly
- 1 tablespoon fresh lemon juice
- 1 tablespoon fresh parsley, chopped
- 2 teaspoons sugar
- salt, to taste
Directions
- Cook barley according to package directions; set aside.
- Saute apple in butter in a nonstick skillet over medium high heat until it starts to soften, about 1 minute.
- Stir in jelly, lemon juice, parsley, sugar, salt and barley; serve warm.
