Apple and Banana Nut Muffins

Ingredients
- 2 cups oat bran
- 1 tablespoon baking powder
- 1⁄3 cup sugar substitute
- 2 egg whites
- 2 tablespoons vegetable oil
- 3 tablespoons light syrup
- 1 cup skim milk
- 2 apples
- 2 ripe bananas
- 1⁄4 cup roasted pecan
Directions
- Combine oat bran, baking powder, and sugar substitute.
- Mix egg whites, oil and syrup; beat until foamy.
- Add milk in food processor chopping apples, bananas and nuts.
- Mix with the rest of the ingredients in food processor until smooth.
- Pour into muffin tin that has been coated with vegetable spray.
- Bake at 400 degrees F for 30 minutes.
