Ingredients
- 1 cup rolled oats
- 1 cup brown sugar
- 3⁄4 cup desiccated coconut (unsweetened)
- 1 cup flour
- 3⁄4 teaspoon baking powder
- 1⁄4 teaspoon salt
- 1⁄2 cup butter
- 2 tablespoons light corn syrup
- 1⁄4 cup shredded coconut
Directions
- Preheat oven to 350°. Lightly grease a square pan pan. In a large bowl, combine oats, sugar, coconut and sifted flours.
- Heat butter and corn syrup in a small saucepan on low heat for 1-2 minutes, until butter has melted and mixture is well combined.
- Make a well in center of dry ingredients. Add butter mixture and combine well.
- Press firmly into prepared pan. Sprinkle with coconut.
- Bake for 20-25 minutes, until golden. Sprinkle with coconut.
- Cool completly in pan. Cut into squares to serve.
