Anzac Biscuits

Ingredients
- 1 cup rolled oats
- 3⁄4 cup unsweetened dried shredded coconut
- 1 cup all-purpose flour
- 1 cup sugar
- 1⁄2 cup butter or 1⁄2 cup margarine
- 1 tablespoon honey or 1 tablespoon light corn syrup
- 1 1⁄2 teaspoons baking soda
- 2 tablespoons boiling water
Directions
- Preheat oven to 300.
- Measure the oats, coconut, flour, and sugar into a medium sized mixing bowl. Stir well.
- In a small pan over medium-low heat, melt butter and stir in honey.
- Place baking soda in a cup or small bowl. Pour boiling water over baking soda and stir to dissolve. Add to melted butter mixture.
- Pour butter mixture over oat mixture. Mix well.
- Cover two baking sheets with kitchen parchment paper or aluminum foil (dull side up). Drop teaspoonfuls of dough 2-inches apart onto sheets.
- Bake 10-12 minutes, or until biscuits spread and are evenly browned.
- Cool biscuits on a baking sheet for 1-2 minutes. Remove with a spatula and finish cooling on wire racks.
