Anzac Biscuits

Yields: 12-24 cookies
Ingredients
- 1 cup rolled oats (oatmeal in USA)
- 1 cup plain flour
- 1⁄2 cup sugar
- 3⁄4 cup desiccated coconut
- 1 tablespoon golden syrup (can substitute corn syrup, I believe)
- 125 g butter (4 oz)
- 1⁄2 teaspoon bicarbonate of soda (baking soda)
- 1 tablespoon water, boiling
Directions
- Mix oats, flour, sugar and coconut together.
- Melt syrup and butter together.
- Mix the bicarb with boiling water and add to butter and syrup mixture. Add this to dry ingredients.
- Place tablespoonsful of the mixture on a greased oven slide (cookie sheet). Bake at 150 - 160 C (300-325F) for 20 minutes.
