Another Easy Tasty German Potato Salad

Yields: 1/2 cup
Ingredients
- 2 1⁄2 lbs red potatoes
- 1⁄3 cup apple cider vinegar
- 1⁄4 cup oil (I use Olive oil)
- 2 tablespoons sugar
- 1 teaspoon salt
- 1⁄4 teaspoon pepper
- 4 hard-boiled eggs, chopped
- 2 tablespoons parsley
- 1⁄2 cup mayonnaise
Directions
- Boil potatoes in skin until tender. Mix vinegar, oil, sugar, salt and pepper and set aside. Drain potatoes, peel and dice while still warm and place in large bowl. Pour vinegar mixture over warm potatoes and let stand for 1 hour. Stir in remaining ingredients and serve.
