Anne's Meatloaf or Hamburgers

Yields: 1 meatloaf
Ingredients
- 1 1⁄2-2 lbs ground beef (Angus 15% fat)
- 1⁄2 cup onion, coarsely chopped (red or yellow onions)
- 2 eggs
- 1⁄4 cup chopped celery (or half celery and half carrot) (optional)
- 1⁄3 cup ketchup (Trader Joe's organic)
- 3 tablespoons ketchup (for top of meatloaf) (optional)
- 1⁄2 cup breadcrumbs, any kind even if not very dry (try low-carb bread)
- garlic salt, pepper
Directions
- For meatloaf:
- Mix everything together.
- Pat into an ungreased baking dish about 2” deep. (No greasing needed if meat used is 15% fat.) Pour additional dabs of ketchup on top.
- If using a loaf pan, make a groove along the top of the meat and pour ketchup into the groove.
- Bake at 350 degrees. A flatter meatloaf needs less baking time than a tall one.
- For hamburgers:
- Use just a bit of bread crumbs or eliminate entirely; pan broil.
