Anna's Bountiful Banana Cake

Ingredients
- 1⁄4 cup milled flax seed
- 3⁄4 cup whole wheat graham flour
- 3⁄4 cup all-purpose flour
- 1⁄2 cup sugar
- 2 teaspoons baking powder
- 1⁄2 teaspoon baking soda
- 1⁄2 teaspoon salt
- 1 egg, beaten
- 1 cup ripe banana, mashed
- 3⁄4 cup blueberries (optional)
- 3 tablespoons vegetable oil
- 1⁄2 cup milk
- 1⁄2 cup chopped nuts
Directions
- Preheat oven to 400°F.
- Blend dry ingredients together in a bowl. In a seperate bowl; combine egg, banana, milk, and vegetable oil. Add dry ingredients to egg mixture and stir until just blended. Fold in nuts and blueberries. Batter will be slightly thick. Pour batter into a greased 9x13" pan. Sprinkle a little sugar over top, if desired. Bake for 18-20 min., or until top springs back when touched.
