Anise Oil Peppernuts

Flavorful bite size crunchy cookies. A German tradition that's been passed down from my family. Perfect for the holiday season. These can be refrigerated and baked at any time.

• Yields: 300 small cookies

Ingredients

• 1  cup butter
• 1  cup white sugar
• 2  cups brown sugar
• 2  eggs
• 1⁄4 teaspoon  anise oil or 1⁄4 teaspoon  extract
• 1  teaspoon vanilla (optional)
• 1  teaspoon allspice
• 1  teaspoon ginger
• 1  teaspoon baking soda
• 1⁄2 teaspoon black pepper
• 4  tablespoons  liquid black coffee
• 1  pinch salt
• 5  cups flour

Directions

1. Cream butter, sugars and eggs.
2. Add remaining ingredients.
3. Roll into snakes.
4. Cut into bite size pieces.
5. Bake at 350 for 10-15 minutes (depending on desired crunch).
