Ingredients
- 2 medium sweet potatoes, peeled and cut into wedges
- 2 parsnips, peeled and sliced
- 1 fennel bulb, chopped
- 1 onion, sliced
- 1⁄2 cup Catalina dressing
- 1⁄2 cup cranberry juice
- 1⁄4 cup maple syrup
Directions
- Place in Large Baking Dish, Sweet Potatoes, Parsnips, Fennel and Onion.
- Mix Together Catalina Dressing, Cranberry Juice, and Maple Syrup.
- Toss With Vegetables.
- Bake at 350 Degrees for 50 Minutes or Until Vegetables are Tender.
