Anchovy and Balsamic Dressing

Ingredients
- olive oil, for frying
- 1 banana shallot, finely chopped
- 3 ounces tinned anchovies, diced
- 1⁄4 cup balsamic vinegar
- chopped chives
- 2⁄3 cup extra virgin olive oil
Directions
- Heat a little olive oil in a small frying pan and cook the shallot until softened. Add the anchovies and cook for 1-2 minutes.
- Remove from the heat and transfer to a bowl. Add the balsamic vinegar and chopped chives. Pour in the extra virgin olive oil and mix together well.
