AmyZoe's Loaded Guacamole

Serves: 2-4
Ingredients
- 2 avocados, seeded, peeled, and diced
- 1 medium tomatoes, diced
- 1 jalapeno pepper, seeded and finely diced
- 1⁄2 cup black beans, rinsed and drained
- 4 green onions, thinly sliced
- 1 lime, juiced
- 1⁄2 cup sharp cheddar cheese, shredded
- salt, to taste
- pepper, to taste
- crackers or tortilla chips, for serving
Directions
- Mash one of the avocados in a bowl.
- Add tomatoes, jalapeno, and lime juice.
- Mix to combine.
- Add beans, onions, cheese, and second avocado. Mix well and season with salt and pepper, to taste.
- Cover and place in the refrigerator until ready to eat.
- Serve with your favorite crackers or chips.
