AmyZoe's Best Salsa Ever

Yields: 4 cups
Ingredients
- 4 small jalapeno peppers (leave seeds in for extra kick)
- 1⁄2 onion, chopped
- 3 garlic cloves
- 1⁄4-1⁄2 cup fresh cilantro
- 6 tomatoes, of varying sizes chopped
- 1 1⁄2 tsp- 2 tsp ground cumin
- 1 teaspoon sea salt, plus more to taste
- 2 tablespoons lemon juice (about a half lemon, juiced)
Directions
- Add all ingredients to the bowl of a food processor.
- Add the jalapenos, onion, and garlic first and then the cilantro and tomatoes so the tomatoes don't have too much liquid.
- Pulse about 10 or so times and until all ingredients are combined and diced, but be sure to stop before the salsa becomes too watery. You can pulse longer if you prefer more liquid in your salsa.
- Taste the salsa and add more ingredients as desired. You may want to stir in the extra ingredients instead of pulsing in the food processor so the salsa doesn't get too watery.
- This tastes best a day after you make it so the flavors intensify.
