Amazing Double Chocolate Truffles

  1. Melt baking chocolate in a heavy saucepan over low heat, stirring constantly.
  2. Remove from heat.
  3. Add butter and cream and stir until smooth.
  4. Refrigerate for 1 hour.
  5. Roll mixture into one inch balls.
  6. Place on an aluminum foil baking sheet and freeze for 4 hours.
  7. Melt white chocolate and shortening over low heat, stirring until smooth.
  8. Dip frozen truffles into white chocolate and return to baking sheet.
  9. Roll in sprinkles or nuts, if desired.
  10. Refrigerate for 10-15 minutes for coating to set.
  11. Store in an airtight container.
