Alsatian Style Noodles With Polonaise Topping

Ingredients

  • 12 lb angel hair pasta
  • 5  tablespoons butter
  • 1  egg, hard boiled, peeled, and put through a fine sieve
  • 12 cup  fresh breadcrumb
  • 14 cup fresh parsley, chopped
  •  salt & freshly ground black pepper

Directions

  1. Cook pasta according to package directions. Toss with 1 tablespoon butter and salt and pepper to taste.
  2. Quickly add remaining butter to a skillet heated over medium heat. Once melted add egg and bread crumbs. Cook and stir about 30 seconds. Add parsley; stir.
  3. Pour over noodles and serve.
