Aloo Beans (French Beans and Potatoes Punjabi Style)

Ingredients
- 2 tablespoons ghee
- 1 tablespoon fresh ginger, minced
- 1 tablespoon cumin seed
- 1 tablespoon garam masala
- 1 teaspoon ground cardamom
- 2 cups small potatoes, halved
- 1 cup cherry tomatoes, halved
- 1 teaspoon ground turmeric
- salt, to taste
- 1 cup water
- 1 lb French style green bean, trimmed
Directions
- Heat the oil over medium-high heat. When the oil is hot, add the ginger and stir-fry for 15 seconds. Add the cumin seeds, garam masala and ground cardamom and stir-fry 10 seconds more.
- Add the potatoes, tomatoes, turmeric, salt and water. Bring to a boil and then drop to medium heat. Cover with a lid and cook for 9 minutes, stirring once a minute.
- Add the beans to the pot and cook until they are tender, stirring once a minute (5 minutes).
- Serve immediately.
