Aloo Beans (French Beans and Potatoes Punjabi Style)

Traditional recipe that chef Bal Arneson cooked up modifying a recipe her mother cooked frequently.

  1. Heat the oil over medium-high heat. When the oil is hot, add the ginger and stir-fry for 15 seconds. Add the cumin seeds, garam masala and ground cardamom and stir-fry 10 seconds more.
  2. Add the potatoes, tomatoes, turmeric, salt and water. Bring to a boil and then drop to medium heat. Cover with a lid and cook for 9 minutes, stirring once a minute.
  3. Add the beans to the pot and cook until they are tender, stirring once a minute (5 minutes).
  4. Serve immediately.
