Almond Tea Cookies

These easy crispy almond cookies are perfect with a cup of tea.

Ingredients

  • 12 cup sugar
  • 34 cup butter (room temperature)
  • 14 cup  vegetable oil
  • 1 12 teaspoons  almond extract (or to taste)
  • 12 teaspoon baking soda
  • 18 teaspoon salt
  • 2 14 cups flour
  • 12 cup  almonds or 12 cup walnuts, finely chopped
  •  powdered sugar

Directions

  1. Preheat oven to 350ºF.
  2. In a mixing bowl, cream sugar and butter.
  3. Beat in the oil, extract, baking soda, salt, flour, and nuts.
  4. Mix well and form into small balls (3/4-inch).
  5. Bake for 12-15 minutes on a greased cookie sheet.
  6. Roll in powdered sugar and cool on cake rack.
