Almond Rice Pilaf

Ingredients
- 2⁄3 cup blue diamond blanched slivered almond
- 3 tablespoons butter, divided
- 1 cup chopped onion
- 2 garlic cloves, minced
- 1 small green pepper, fine chopped
- 1 cup long grain rice
- 1⁄2 cup raisins
- 1 teaspoon cumin
- 1⁄2 teaspoon salt
- 1 3⁄4 cups chicken broth
Directions
- Saute the almonds in 1 Tbsp butter till golden;reserve.
- Saute onions and garlic in remaining butter till translucent.
- Add green pepper and salt, saute 2 minutes.
- Add chicken broth.
- Bring to boil. Reduce heat to low, cover and cook 20 minutes till liquid is absorbed.
- Remove from heat and let stand covered 5 minutes.
- Stir in almonds.
