Almond Raspberry Tassies (Filling)

Yields: 24 tassies (approximately)

Ingredients

  • Filling

  • 1  egg
  • 12 cup sugar
  • 12 cup almond paste, crumbled
  • 14 cup  raspberry preserves
  •  chopped  almonds (garnish)

Directions

  1. Preheat oven to 350F.
  2. Beat egg, sugar, and almond paste together.
  3. Divide raspberry preserves among pastry-lined mini muffin cups (about 1/2 teaspoon each).
  4. Spoon 1 level teaspoon of the almond mixture over the preserves.
  5. Sprinkle with chopped sliced almonds.
  6. Bake for 20-25 minutes.
