Almond Paste

Yields: 1 1/4 pounds
Ingredients
- 2 cups blanched almonds
- 1 egg white
- 1 1⁄2 cups icing sugar
- 2 teaspoons lemon juice
Directions
- Chop almonds VERY fine. Add 1 egg white gradually, then 1 cup icing sugar and lemon juice. K.
- Knead with more icing sugar until a soft dough is formed.
- Roll out to desired shape, about 1/4 inch thick, and top fruitcakes.
