Almond Paste

Yields: 2 cakes
Ingredients
- 2 3⁄4 cups sugar
- 3 1⁄4 cups icing sugar
- 2 1⁄2 lbs ground almonds
- 4 eggs, beaten
- 2 tablespoons lemon juice
- 2 1⁄2 teaspoons vanilla extract
Directions
- Mix sugars.
- Add almonds.
- Mix eggs, lemon juice and vanilla.
- Mix together.
- Knead til pliable.
- Divide in 3.
- Wrap each in tinfoil.
- Let stand overnight.
- Roll out 1 ball to 1/2 inch thick and cover cakes.
- Let stand overnight covered with a tea towel.
- Ice cakes if desired.
