Almond Meringue Pie

A sweet treat - delicious with fresh fruit in season

Ingredients

  • 20  Ritz crackers or 20  jatz  crackers
  • 1  cup caster sugar
  • 1  teaspoon vanilla
  • 1  cup  sliced almonds
  • 3  egg whites

Directions

  1. Preheat oven to 180c. Grease pie dish.
  2. Beat egg whites until stiff. Add sugar and vanilla, beat again for 30 seconds.
  3. Fold in crushed biscuits & nuts.
  4. Pour into pie dish and bake for 20 - 30 minutes.
  5. Decorate with whipped cream, fruit or more nuts.
