Almond Kiss Cookies

My Valentine's Day indulgence.

Yields: 40 cookies

Ingredients

  • 12 cup butter, softened (no substitues)
  • 12 cup sugar
  • 12 cup brown sugar
  • 1  large egg
  • 1  teaspoon  almond extract
  • 2  cups all-purpose flour
  • 1  teaspoon baking soda
  • 14 teaspoon salt
  •  additional sugar
  • 40  hershey's milk  chocolate kisses with almonds, unwrapped
  • Glaze

  • 1  cup powdered sugar
  • 1  tablespoon milk
  • 4  teaspoons  raspberry jam
  • 14 teaspoon  almond extract

Directions

  1. In a mixing bowl, cream butter and sugars.
  2. Beat in egg and extract.
  3. Combine the flour, baking soda and salt; gradually add to creamed mixture.
  4. Cover and chill for 1 hour or until easy to handle.
  5. Roll dough into 1-inch balls, then roll in additional sugar.
  6. Place 2-inches apart on ungreased baking sheets.
  7. Bake at 325° for 10-12 minutes or until golden brown.
  8. Immediately press a chocolate kiss into the center or each cookie.
  9. Cool on wire racks.
  10. Combine glaze ingredients; drizzle over cookies.
