Almond Butter Balls - Danish Mandelsmørboller

Yields: 24-36 cookies
Ingredients
- 1 cup butter, softened
- 3 tablespoons powdered sugar
- 1 teaspoon vanilla
- 1⁄4 teaspoon almond extract
- 1 1⁄2 cups flour
- 1 cup chopped almonds
- 1 cup powdered sugar
Directions
- Cream butter and sugar. Add vanilla and almond extracts and mix well. Stir in flour and fold in the chopped almonds. You may need an additional 1/2 cup of flour to get a good consistency.
- Shape in small balls and place on parchment lined cookie sheets.
- Bake in a preheated 350º oven about 20 minutes, until slightly browned. Roll in powdered sugar while warm. Or, for less mess, shake in a ziplock with powdered sugar while warm.
