Almond Brittle

A nice change from the peanut.

Directions

  1. Mix baking soda, water and vanilla. Set aside.
  2. Mix sugar, 1/2 cup water and corn syrup in a copper constant stir kettle.
  3. Cook over medium heat until mixture reaches 240* on a candy thermometer.
  4. Add butter and almonds.
  5. Cook until it reaches 290* on a candy thermometer.
  6. Immediately turn off heat.
  7. Quickly stir in baking soda mixture until light and foamy.
  8. Pour onto a greased half sheet baking pan, roll out with a marble rolling pin until about 1/4 inch thick.
  9. Cool completely: at least 1 hour.
  10. Break into pieces, store in an air tight container.
  11. This makes about 3.25 lbs. of brittle.
