Almond Blondies

  1. Preheat oven to 350°F, line a 9-in square baking pan with foil. Lightly coat with nonstick cooking spray.
  2. In a medium saucepan over very low heat, stir butter and white chocolate chips until melted.
  3. Remove from heat and whisk in sugar until blended.
  4. Whisk in eggs and extract.
  5. Stir in flour and baking powder.
  6. Pour into prepared pan.
  7. Bake 20 to 25 minutes until a wooden toothpick inserted in the center comes out clean.
  8. Cool completely in pan on wire rack.
