  1. Heat the oven to 300°F.
  2. Spread the almonds in a single layer on a cookie sheet.
  3. Toast the almonds for about 20 minutes, stirring every 5 minutes.
  4. Remove from the oven and cool.
  5. You may want to remove the almonds and wipe the cookie sheet clean.
  6. Make sure that the almonds are spread evenly on the tray.
  7. Melt the white chocolate (a double boiler is best to avoid scorching).
  8. Pour the chocolate over the almonds.
  9. Chopsticks work well to spread the chocolate around without disturbing the almonds.
  10. Refrigerate until hard.
  11. Break into 2-3 inch pieces.
