Alligator Balls

Ingredients
- 1 lb chopped alligator meat
- 1 egg
- 2 tablespoons finely chopped onions
- 2 tablespoons finely chopped celery
- 1 tablespoon finely chopped parsley
- 2 tablespoons chopped shallots
- 2 teaspoons lemon pepper
- 1⁄2 teaspoon salt
- 1⁄4 cup breadcrumbs
- flour, to dredge
- 1 cup cooking oil
Directions
- Combine all ingredients and form into 1" balls.
- Allow to set for 1 hour.
- Dredge with flour and fry until brown.
