Alison's Hummus

I didn't use to like hummus but then I tried this recipe and tweaked it over time. Now it's perfect. Enough said. Don't skip roasting the garlic or you will be sleeping alone tonight! I make my own tahini by blending sesame seeds and a little olive oil in the food processor forever, then keeping it in a jar in the fridge. Also, I buy a whole bag of peeled garlic cloves from Costco, roast them in the oven (sprayed with a little oil) for about 15 minutes until golden brown, and then put the whole batch in the freezer. Then anytime I want to make hummus I just put the frozen cloves in the food processor and voila. Show more

Directions

  1. Put all ingredients in food processor except oil. Blend until smooth, drizzling oil into top of processor. Top with fresh parsley.
