Directions

  1. Trim the cauliflower, discarding the leaves and stem.
  2. Steam the cauliflower florets for 12 minutes until tender.
  3. Reserve the steaming liquid.
  4. Put the cauliflower, olive oil, pimentón, salt, and black pepper in food processor or blender. Blend or process until relatively smooth.
  5. Add the tahini and lemon juice, and mash or process until the hummus is uniform in texture and as smooth as you like it, adding reserved cauliflower steaming liquid as needed if the mixture is too thick.
  6. Taste and adjust the seasoning.
  7. Serve immediately, or cover and refrigerate for up to a week.
