Alan Jackson's Favorite Chicken Salad

Ingredients
- 4 (6 ounce) chicken breasts
- 46 ounces pineapple juice
- 2 tablespoons honey
- 1 teaspoon vinegar
- 1⁄2 cup slivered almonds, toasted
- 3⁄4 cup mayonnaise
- 1 cup dried sweetened cranberries (optional)
- sea salt
- pepper
- lettuce leaf
Directions
- Bring chicken and next three ingredients to a boil. Simmer for 45 minutes. Remove chicken and cool for 10 minutes.
- Shred chicken with two forks.
- Mix chicken, almonds, cranberries, and mayo. Add salt and pepper to taste.
- Serve on lettuce leaves.
