Alan Jackson's Favorite Chicken Salad

I found this recipe in Parade's online magazine. Sounds good, but I haven't tried it yet.

  1. Bring chicken and next three ingredients to a boil. Simmer for 45 minutes. Remove chicken and cool for 10 minutes.
  2. Shred chicken with two forks.
  3. Mix chicken, almonds, cranberries, and mayo. Add salt and pepper to taste.
  4. Serve on lettuce leaves.
