Alabama Pecan Bars

Yields: 1 9 x 13 pan
Ingredients
- 4 large eggs, beaten
- 1 cup sugar
- 1 cup brown sugar
- 1 cup canola oil
- 1 1⁄2 cups self rising flour
- 1⁄4 teaspoon salt
- 1 teaspoon vanilla extract
- 2 cups pecans, finely chopped
Directions
- Preheat oven to 350, and lightly grease a 9 x 11” baking dish with butter or Kittencal’s Pan Release.
- In a large mixing bowl, gently mix together eggs, sugars, and oil until fully incorporated.
- Mix in self-rising flour and salt until incorporated.
- Add vanilla extract and blend inches.
- Fold in pecans.
- Pour batter into prepared baking dish.
- Bake for 30-35 minutes, or until toothpick inserted comes out clean.
- Remove from oven, and let cool before slicing. I won’t lie -- I cut when they’re still lukewarm.
